Stewarding Our Mornings: A Simple Egg Bite Recipe

 I used to be a “cup of coffee for breakfast” kind of mom while my sons ate their meals… only to end up completely starving later on. Most days, I would end up buying something quick to eat once I got to work.

About a month ago, I came across this recipe for high‑protein egg bites, and now I prep them once a week. Recently, the Lord has really been impressing on our hearts the importance of being good stewards of what He has given us. Prepping food ahead of time has helped us so much—not just with eating better, but also with avoiding the temptation to grab something quick, expensive, and not very healthy.

This has honestly been such a win for our family.

What you will need for this recipe:

1 dozen eggs

½ cup low‑fat cottage cheese

Salt, pepper, onion powder, and garlic powder

2 green onions, diced

3 jalapeño peppers, chopped

Chicken breakfast sausage

Reduced‑fat feta cheese

One of the things I love most about this recipe is how versatile it is. I’ve swapped out the jalapeños for banana peppers or red bell peppers when I want something different. You can also use different flavors of chicken sausage or switch up the cheese. I’ve even made plain cheese ones just for my sons.

Truly, the options are endless. If there’s an ingredient you don’t like, don’t feel bad swapping it out!

To make the egg bites:

Preheat the oven to 350°F and spray a muffin tin with nonstick cooking spray.

Blend the eggs, cottage cheese, and seasonings until combined.

Fill each muffin cup about ¾ of the way full with the egg mixture, then add your diced ingredients.

Sprinkle feta cheese on top of each cup.

Bake for 25 minutes, then let cool for 5 minutes before serving—or store them in the fridge for up to 4 days.

When reheating, I usually do 3 egg bites at a time for about 45 seconds in the microwave.
