Healthy Taco Salad by Krista Stump

If you are like me, then finding meals with a quick prep time is important. I usually have a small window of time to get meals prepped, cooked, and on the table for my family.

With spring and summer on the horizon, I wanted to share with you this quick and delicious recipe that makes for a great lunch or dinner to make for family or friends! Here is my healthier version of taco salad. I love to make it on warmer days because it is so fresh and full of veggies.


 5 cups romaine lettuce

½ cup – 1 cup of favorite salsa (your preference)

½ cup fat free or light sour cream

1 lb lean ground beef or turkey

2 tsp chili powder

1 cup reduced fat shredded cheddar cheese

1 cup canned corn

1 cup black beans

1 cup diced tomatoes

1 avocado diced

black olives for garnish

green onions for garnish

(the beauty of this recipe is that you can add more or less ingredients depending on your preferences)


 Combine 2 tsp chili powder and the ground beef or turkey, cook thoroughly. Drain and set aside. In a large bowl, combine lettuce, cheese, corn, beans, tomatoes, avocado, and meat. Add in ½ cup each of salsa and sour cream, then mix. The combination of salsa and sour cream should create a creamy dressing. Continue to add more salsa and sour cream until desired consistency is reached. Top with black olives and green onions and then it is ready to serve! Serving size:4

Tip: If you want to add a little crunch, you can top with some crushed multigrain tortilla chips.

 As quickly as I want cooking to be done, I must remember 1 Corinthians 10:31:

“So whether you eat or drink or whatever you do, do it all for the glory of God.”

Sometimes preparing meals can feel so monotonous and mundane, but we can conduct ourselves in a positive manner and give God the glory even as we cook. We can thank him for the opportunity to serve our family and friends while bringing them joy through our meals
