This recipe is super easy and a refreshing addition to any occasion!! It can be served as a side dish or dessert.
We were served this fruit salad when my daughter’s college roommate’s family invited us over for a light summer meal after a 3½ hour drive from Cleveland to Dayton. We loved it so much we had to have the recipe! We have been making it and sharing it ever since. Enjoy!
Fruit ‘n Yogurt Salad
(From the Pillsbury Cookbook – Makes 12 Servings)
1 20 oz can of pineapple chunks (drained – reserve the liquid)
11 oz can of mandarin oranges (drained – reserve the liquid)
2 tablespoons of cornstarch
8 oz container of plain yogurt
1 tablespoon of yogurt
1 tablespoon of vanilla extract
1 cup seedless green grapes, halved
1 sliced banana
1 apple cored and sliced
In a small saucepan, combine pineapple and mandarin orange liquid with cornstarch; mix well.
Cook over medium heat stirring constantly until thickened, cool slightly.
In a large bowl, combine yogurt, sugar and vanilla; mix well.
Stir in cooked mixture.
Stir in all the fruit, cover, and refrigerate about 4 hours or until completely chilled.
