Banana Cake/Bread by Deb Fristik

Bread From Heaven:

Day after day, for 40 years the Israelites ate a coriander type, flaky, slightly sweet nutritional substance they called manna.  That got me thinking – what would I eat day after day if it were just one thing?  I’m a pushover for bananas, blueberries, bread, and oatmeal.  Two of those four are incorporated into a simple and yummy recipe that my family enjoys eating often.

Banana Cake/Bread

3 or 4 ripe bananas, mashed

1/2 cup butter, melted

1 cup sugar

1 egg, beaten

1 teaspoon vanilla

1 teaspoon baking powder

pinch of salt

1 3/4 cup flour

Preheat oven to 350 degrees.  Hand mix butter and mashed bananas in a large mixing bowl.  Add in the sugar, egg, and vanilla and mix well.  Blend the flour, baking powder, and salt together and carefully mix into the batter just until moistened.  Spoon batter into a 7×9 or 8×10 glass baking dish, and bake for 40-45 minutes, or bake in a loaf pan for 60 minutes.  Cool, slice, and serve.

Food for Thought –   When Jesus told his followers to pray, “Give us this day our daily bread” did it remind them of their desert wandering forefathers asking God for food, and His immediate and faithful provision of daily manna? Did it boost their confidence that God daily provides? When I pray as Jesus taught, do I trust and thank Him for His daily provisions? “Ho! Everyone who thirsts, come to the waters: and you who have no money, come buy and eat.. Listen carefully to Me and eat what is good and let your soul delight itself in abundance.  Incline your ear, and come to me.  Hear, and your soul shall live: and I will make an everlasting covenant with you.”(Isaiah 55:1-3)  Thank you Lord for the everlasting covenant supplied to us through faith in Christ Jesus!  He is our Bread of Life!
